Quinoa & Black Bean Casserole

My friend, Becky introduced me to this recipe.  A delicious, healthy and filling casserole that also happens to be vegetarian!  This will definitely become a staple in our house.

Quinoa Black Bean Casserole

Serves 8-10

Adapted from here 

  • 1  1/2 cups cooked quinoa
  • 2 (15oz) cans black beans, drained and rinsed
  • 2 large sweet potatoes, shredded
  • 1 cup cheddar cheese, shredded, divided
  • 1 Tbsp ground cumin
  • pinch of salt and pepper
  • 3 eggs
  • 1 cup salsa

Preheat oven to 350°F.  Prepare a 9″x13″ casserole dish with cooking spray.  In a large bowl combine all ingredients using only half the cheese, and mix well.  Sprinkle remaining cheese on top and bake for 30 minutes.  Serve with salsa and sour cream (or plain greek yogurt), as desired.  Even better the next day, so feel free to make it ahead of time.


This is a really easy recipe!  I’m excited to try it with other flavor combinations.  My friend made it with ground turkey instead of half the beans, and said it was delicious.
